2 cups American Cheese, grated
2/3 cup evaporated milk, undiluted
1/2 teaspoon prepared mustard
2 cups cooked large lima beans
2 medium-sized tomatoes, sliced
Salt to taste
Pepper to taste
Combine cheese, milk and mustard. Cook and stir in double boiler until cheese melts and sauce is smooth. Put lima beans into casserole dish. Cover with 3/4 of the sauce. Top casserole with tomato slices, salt and pepper and remaining sauce. Bake in a 350 degree oven for 30 minutes or until lightly browned and bubbly on top.
