Sour Cream Lemon Pie

Recipe from Carol Steig, Butte, N.D.

Mix sugar and cornstarch in medium kettle. Whisk in milk till smooth, then the yolks until blended. Stir in the lemon juice and margarine and whisk constantly over medium heat. It takes 5 to 7 minutes, just till boiling. Remove from heat and stir 1 minute longer. Cover surface with plastic wrap and cool to room temperature. Add sour cream and stir well. Pour into pie shell. Refrigerate. Garnish with dollops of whipped cream.

1 baked and cooled pie shell

2/3 cup sugar

3 tablespoons cornstarch

1 cup milk

3 egg yolks

1/4 cup lemon juice

1/4 cup margarine

1 cup sour cream
