1 whole chicken or several breasts, boiled, cut into bite-size pieces (reserve broth)

1-2 cups Miracle Whip mixed with 1/2 to 1 teaspoon sugar*

1 cup celery, chopped

1 small onion or 3-5 green onions, chopped

3 hard boiled eggs, diced

1 pkg. Creamette Macaroni Rings, cooked

Salt to taste

Pepper to taste

A dash of celery salt, optional

A dash of onion salt, optional

Cover chicken with water and simmer until chicken is tender. Cool and cut into pieces. Save broth and use to cook rings according to package directions (you may have to add water.) Cool macaroni. Add rest of ingredients and mix well. Stir carefully. Serves 6-8.

*Miracle Whip amount is how well you like salad dressing

I always double this recipe when I make it. We really enjoy this salad - it’s a family favorite. I always make it a day ahead, too. Stir before serving.

This recipe was always a favorite at our church’s Salad Bar Luncheon that we held as a fund raiser.
