(German Pancakes for

New Year’s Eve)

1 tablespoon anise seed

1 cup hot water

1/2 cup Graham flour and/or buckwheat flour

1/2 cup corn meal

1/2 cup rye flour

1 cup white flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup raisins (or more)

1/4 cup dark molasses

1 cup buttermilk

2 eggs

2 or 3 tablespoons oil

Country-style sausage (no garlic), cooked and cut in 1/4-inch slices

Soak anise seed in hot water. Use the liquid (sometimes we put seed in, too). Or you may just use anise oil - that works, also. Mix together dry ingredients. Add raisins. Mix molasses, buttermilk and anise seed juice with dry ingredients. Add eggs and oil, mixing all together a few hours before using. Make the same consistency as regular pancakes - not too thin. To make pancakes, put batter in hot frying pan same as when you make regular pancakes. Add 3 to 4 pieces of sausage on top when the first side is brown, turn over and brown the other side until done.
