1 lb. scallops

1 tablespoon onions, chopped

3 tablespoons butter

3 tablespoons flour

1/8 teaspoon pepper

1/2 cups milk

3 oz. mushrooms, chopped

1 tablespoon pimiento

2 tablespoons Parmesan cheese


1/2 cups American cheese, grated

1-1/2 cups chips, crushed

Boil scallops, simmer 2 minutes; hold 1 cup of juice. Cook onions in butter, blend in flour and pepper. Add liquid and milk. When thickened, stir in mushrooms, pimiento, Parmesan and scallops. Put in casserole, sprinkle with Parsley and American cheese. Top with chips. Bake at 350 degrees for 25 minutes.
