1 teaspoon vegetable oil
One 22.5-oz. pkg. shredded hash browns, thawed
2 cups Co-Jack shredded cheese, divided
8 oz. cream cheese, softened
1/2 teaspoon black pepper
8 oz. thickly sliced deli ham
4-5 green onions (save tops for later)
Press hash browns into bottom of oil-greased 11x17 pan in an even layer. Sprinkle half of cheese over hash browns. Bake 13-15 minutes at 450 degrees until crust starts to brown and cheese is melted. Meanwhile, whisk or beat cream cheese until smooth. Gradually add eggs and black pepper, whisk until smooth; set aside. Coarsely chop ham and slice onions, saving tops for later. Place in pan, and cook and stir over medium heat until hot. Sprinkle ham/onion mixture over prepared crust. Pour egg mixture over all. Return pan to oven, baking 6-8 minutes or until center is set.
Remove from oven, and sprinkle with chopped onion tops, tomatoes, and rest of shredded cheese, if desired. Cut into squares.
