Pumpkin Hot Dish

One soccer ball size pumpkin

1 onion, chopped

2 tablespoons vegetable oil

1-1/2 to 2 lbs. ground beef

2 tablespoons soy sauce

2 tablespoons brown sugar

One 4-oz. can sliced mushrooms

1 can cream of chicken soup

1-1/2 cups cooked rice

8-oz. can sliced water chestnuts, drained

Clean out the center of a soccer ball size pumpkin. If you desire you can paint a face on the outside. Saute onion in oil. Add meat, brown and drain. Add soy sauce, brown sugar, mushrooms and soup. Simmer 10 minutes. Add rice and water chestnuts. Fill pumpkin shell. Replace top of pumpkin on shell. Place pumpkin in a baking dish or on a cookie sheet. Bake at 350 degrees for 1 hour or until pumpkin meat is cooked completely. When serving this hot dish, I serve it out of the pumpkin shell and scrape some of the pumpkin meat into the hot dish.

This is a wonderful fall hot dish. It is very attractive to serve, as well as tasty.
